vegetable milk and candies out of nut cake
an easy way to make a healthy vegetable milk and delicious sugarless candies at home
ingredients:

for milk:
-
1 cup of raw nuts or seeds (almond, hazelnut, cashew, sunflower, sesame, or other)
- 3 cups of filtered or spring water
- pinch of Himalayan or sea salt
- 1 teaspoon of vanilla extract (if available)
- 2-3 dates for sweetness (optional)

for candies:
- nut cake left from milk making process
- 4-5 dried apricots and prunes each
- pinch of Himalayan or sea salt
- 1 teaspoon of vanilla extract (if available)

Vegetable milk:

Soak nuts or seeds in cold clean water overnight.

In the morning rinse thoroughly and, if you wish, you may remove the skins (I am missing this part).

Blend nuts, water and other ingredients well.

After blending filter the milk using cheese pouch or just clean gauze.

And... Your milk is ready and can be stored in the fridge for 3-4 days.

Candies out of nut cake:

Blend prunes and dried apricots (after washing and drying them).

Add Himalayan or sea salt (salt opens up taste in desserts) and vanilla extract (if available).

Add nut cake left after preparation of vegetable milk, mix well and form small balls.

Roll candies in desiccated coconut (or poppy seeds, cocoa or even turmeric).

Put candies in the freezer and enjoy them in 1 hour!
