banana paleo bread
delicious banana bread without gluten, sugar and lactose
Ingredients:

- 2-3 ripe bananas
- 2 cups of almond flour
- 1/2 cups of tapioca starch
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1/4 teaspoon of salt (pink or sea salt)
- 2 big eggs
- 1/4 cup of honey
- 1/4 cup of oil (coconut or ghi)
- 1 teaspoon of vanilla extract
- 1/2 cup of walnuts of Brazil nuts
- pumpkins seeds for topping

Heat up the oven to 180С.

Smash bananas to the smooth puree with the fork. Add all other ingredients except for the nuts.

Use mixer or mix the dough with hands and add nuts at the last stage.

Oil the baking tray with coconut oil.

The dough is enough for 12 muffins or 1 bread.

Muffins should be baked for 22-25 minutes or until the toothpick is dry.
If you are making bread, it will take 40-45 minutes till the golden color crust.

One cup = 250 g.

If you are planning to top the bread with nuts or seeds, do it after 15 minutes in the oven while the dough is still wet. This way your seeds will not fall down.
