minestrone
minestrone is one of my favourite soups of the series "addallyouhaveinthefridge", and when you need to cook a quick dinner after day in the office - it's a must recipe in your cooking book
Ingredients:
- 1 tablespoon of olive oil
- 1 average size onion - cut
- 100-150 g of asparagus / you may skip
- 1 average marrow
- 1 stem of celery
- 400 g of cut tomatoes
- 2 teaspoons of dry Italian spices
- 30 g of pasta / I had buckwheat, gluten free pasta
- 1 cup of cauliflower / separated to smaller pieces
- 2,5 cup of water or vegetable broth
- salt and pepper to taste

Put oil in the pot, add onion and asparagus and cook for 2 minutes, then add cauliflower, celery, water or vegetable broth and bring to boil.

Add tomatoes, spices, pasta (to your choice) and cook for 10 minutes.

Meanwhile cut fresh basil, green onion, microgreens and parsley.

Serve with any greens to taste. The more greens the better.

I promise that cooking will take no longer than 15 minutes considering that all vegetables/ greens are already washed (and you remember about the preparations that make your life easier?) and are key in the fridge.
