healthy cauliflower "rice"
i like cooking with cauliflower. it is good for soup, and as a base for pizza, and even for smoothies. and now «rice»
Ingredients:

- 600 g of cauliflower;
- 2 tablespoons of soya sauce;
- 1 tablespoon of sesame oil;
- 1 table spoon of ginger, finely chopped;
- 1/4 teaspoon of white pepper;
- 2 tablespoons of vegetable oil;
- 2 eggs;
- 2 garlic cloves finely chopped;
- 1 cut onion;
- 200 g of broccoli;
- 2 carrots cut in small stripes;
- 1/2 cup of corn / green beans;
- 1/2 cup of green peas / can be frozen;
- 2 -3 feathers of spring onion, finely cut.

Put cauliflower in blender or food processor and blend it for 1-2 minutes till the size of the rice.

In a bowl mix soya sauce, sesame oil, ginger, white pepper, and leave it to rest.

Heat vegetable oil (I had olive oil) in the pan, add eggs and cook for 1-2 minutes stirring constantly. Put ready eggs to the plate and leave them to cool down.

In the same pan add 1 tablespoon of oil, garlic, onion and braise for 3-4 minutes till vegetables become transparent.

Add broccoli, carrots, corn, green peas (frozen, marinated or boiled) to the pan with onion and cook constantly stirring for 3-4 minutes until vegetables become soft.

Add cauliflower "rice" and cook for another 3-4 minutes stirring.

Serve hot with sesame seeds, spring onion, eggs and soya sauce with sesame oil.

I also had microgreens to make it even more healthy and my favourite champignons.
